For the last two weeks, we've had the pleasure of hosting our Food Advisor, renowned French-born Chef, Jacques Reymond, on Turtle Island. Jacques and the team prepared some amazing South Pacific inspired dishes this week for the celebration of the islands 35th Anniversary.
From three and four course meals with wine pairings to food demonstrations and fish preparation, our guests have had the culinary experience of a lifetime. Four intimate tables of six set beneth twinkling lights under the Baka Tree was the setting for our fine dining restuarant-style dinner this week - a first for Turtle Island. Jacques and his team prepared an absolutely amazing four course meal for our guests...
The evenings meal began with a tartare of yellow fin tuna and local rock lobster dumplings with a Pinot Grigio wine pairing from France. The main was a lacquered saddle of lamb with garden vegetable couscous and mint and lime herb salsa. The main was paired with Red Head Shiraz from Barossa Valley. To finish, guests enjoyed a decadent chocolate souffle with homemade coffee icecream, spiced pineapple and caramelized banana. Served alongside desert was a Konrad/Sigrum noble Riesling dessert wine.
After dinner, Jacques introduced the kitchen team to our guests, and they received a standing ovation for the brilliant meals they have prepared over the week long celebration.
During Jacques' visit, he has also worked with our Head Chef Beni to create a new world-class menu for our guests to continue to enjoy. On Turtle Island, you receive a culinary experience like no other.
